hahahah, thyme is my favourite scent in the world.
Have started to grow some.
I planted a small one from walmart 4 years ago right outside my front door when I moved here. With Little to no care , it's huge. Falls over and continues to spread.
I use both thyme and rosemary a lot in cooking, I make fresh baked beans with a good sprig of fresh thyme. onions , bacon, garlic, tomato puree and a can of cannellini beans. and a cup of good chicken stock, It is very good

Re: Random thoughts on cooking and cooking utensils
Cajuns have been cooking with wooden utensils since the beginning of time!
The reasoning behind it is because cast iron pots were the preferred method of cooking.
Cast iron pots are the best in the world for cooking if they are seasoned right and maintain the seasoning . The first true non-stick, cookware!
Seasoning is done with several layers of baked on oil or just a lot of frying. Lol.
Any kind of oil or fat or lard can be used as long as it doesn't contain salt. Bacon grease is not good.
Wooden utensils or plastic today are a must. Just like non stick pots. Except, if you scratch the oil off of a cast pot you can always reseason it and don't eat Teflon.
Here's one I cleaned up about 2 years back . It wasn't very rusty, but it took a lot of work to get it like you see it here.
It's a 2 burner, Lodge Duck pot with a dual purpose lid that doubles as a grill.
I'm not even sure if I have pics anymore.

The amount of both garlic and onion I use could kill a non Cajun!

Re: Random thoughts on cooking and cooking utensils
I kinda lost my direction and I'm really not in the mood to type long posts. Lol
I'm tired and hungry!
But getting back to using wooden utinsils.
I've been pretty satisfied with most of the bamboo products I've purchased over the years.
From spoons to cutting boards.
But... I bought a really thick and well designed board from wally. It was $25! Tri-layered and reinforced on all corners.
It was worth it. But ill prolly never use it cause I have a couple more.
But I bought a 5 set of bamboo spoons also and I thought was ridiculously priced at $6.
Used to buy dat fa $1.97

I'm going to make a special effort to 1. Never by spatulas that are put together as opposed to being in ONE solid piece and 2. get rid of any that are made with 'parts' regularly.

Plastic spatulas are inflexible and absolute garbage.
