Fried Green Tomatoes
Waiting for my tomatoes to go red but in the meantime to lessen the weight on the vines i'll harvest a large green from time to time and then fixd them myself for the Cap'n and I or given to neighbors with instructions, they usually don't know how to fix them, on how to do it.
Cap'n said this am....this would sure be good on an egg sammich. So i got on the computer quickly and found. Fried green tomato sandwich.
Fix your fried greens as usual, drain the oil, wipe out the pan and then butter a couple slices of bread, toast in the pan, add a fried green, slice of pepper jack..whichi didn't have so i used American with sirracha salt and garlic and pepper, then top with some red maters. Butter two more slices and place on top and turn till the cheese melts to the consistency you like if you can wait that long. LOL
HMM HMM GOOOOOD.

and @2cent...know when i first learned how to make fried green tomatoes. We were travelling in arkeensahw and stopped at this little stand selling all kinds of veggies/fruits and green tomatoes and this young black girl minding the store told me how to do it.

Fried Green tomato Casserole. I'm gonna do it like i do eggplant parmesan except use american or cheddar cheese or VELVEETA!!! MWAHAHAHAHAHAH

Thanks, I have never tried fried green tomatoes either.
Will soon have many green tomatoes from a plant I have to move. I had no idea what to do with them.

fried green tomato casserole. it's a keeper.
So i thought for awhile what to combine with the fried green tomatoes...and i said i'd do it like my eggplant parmesan.
Fixed the fried green tomatoes per usual.
Start the layering. Little tomato sauce in bottom of baking dish then a layer of fried green tomatoes, then cheese, (I used a creamy cheese blend almost like velveeta cheese but shreded) then sauce, fried green tomatoes, cheese, sauce, cheese...bake 350 degrees for 30 minutes. layer on fried onion rings, bake five more minutes. remove from oven.
I like it. Next time MORE fried green tomatoes...thicker layer. I sprinkled on a little tiny bit of sugar on each tomato before coating with egg and flour/cornmeal mixture. But i always add a little sugar to any tomato dish.

So sorry, @Calypso Jones. Trying to reply to you earlier today is when I found out our phone company abandoned us. No phone, 'puter, nor wifi t.v. channels. Doubt we'll ever learn why. What recipe did that lady use?
We slice the 'maters, press in seasoned four, dip in egg, press in seasoned flour 2nd time, then fry in butter, 'til golden brown.
Same way we do slice zucchini, fwiw.

If the egglant slices are large, use them as the "bread" and make a sandwich with fried tomatoes and whatever you wish in the middle.
