I cure brisket into corned beef. Takes about 5 days, and a bit of brine, and you have glorious corned beef. I take the "flat" and slice it into Reuben Sandwich meat. Then, I smoke the point for about 5 hours, to make pastrami. Slice thin.
I use Pastrami to make Sammie Burgers. Instead of Bacon, I use pastrami. Mustard, pickle, etc.
You've tickled my fancy with this post Tiny, how about some recipes ?,I fancy making some corned beef I have some good slabs of beef from the cow I popped a few weeks back ,

Yesterday during my morning swim I came upon a conch. Took a bit but I finally captured after a 20 minute or so dash. (He was definitely Olympic class). Just got done cleaning him. I soak it in ice water for a day or so. Pops right out and leaves the shell intact. just over 3 oz of meat. I've diced it and will saute it in peanut oil with garlic, ginger and lemon juice. Serve it with stir fry it with peppers and onions.
