I couldn't figure out what 'mo tail' was. I see in the ingredients list that it's RoTel and it's canned tomatoes lol.

She sounds just like my Aunt Sarah in East TX.
I should get some beef broth and try it. I have all of the other ingredients. I put Rotel into everything. It's diced tomatoes with onion and peppers.

We just call them crushed or diced tomatoes. They come in different brands.

There are several varieties of crushed or diced tomatoes sold here, as well. Ro-Tel, otoh, comes w/added diced onions and bell peppers. Just to go back on this...I made it this afternoon.
T'was ver' good, as the old grump said in the play Hot l Baltimore. Perhaps a bit hot, as I used a Food Club Mexican rice stock, instead of Rice-A-Roni.
But it cooked right up; filling, and had two soup bowls of leftovers. I could have eaten much more, but I have to watch the rice. Diabetes...which is well-controlled, mostly because I watch things like rice and mashed potatoes.
Try it. Takes an hour, but it doesn't need constant attention. Good meal to cook if you're busy with something else.
