Vanilla Cookies

She scoops her sugar and flour out of a drawer!   Lol

I like this lady!  I make shortbreads like this ie roll them into a log, refrigerate and then cut into rounds and they are awesome. I never knew this method was called "icebox" though.

Red. Are you saying that vanilla ice box cookies are the same as shortbread??

I love shortbread but never thought of making them myself.

I shoulda sent you a passel of my famous christmas candy... it's cold enough down there isn't it. Can't send it to florida...it melts into one big chocolate blob. LOL

No they're not the same but the method is similar to the way I do mine. Shortbread is easy to make but you need to use rice flour instead of ordinary flour. The rice flour gives shortbread its gritty texture.

Any easy recipe will do lol.  I use my mother's shortbread recipe and I'll scan it later and post it but I don't do them nearly as well as she did.

She used to mix it up and put a little dollop of icing on some, a glace cherry on some more and a blanched almond on others.  I loved the ones with the cherries and almonds on top.

She'd roll the mix into a log and refrigerate for a while then slice them into rounds.  It makes quite a few!

Basic Recipe

Trying to find a cookie that my grandma made and she died before i even thought of wanting that recipe.  It used sugar, flour, eggs, butter. I dont' remember milk or butter milk in it but maybe.

she would cut them out of the dough round shapes...bake..they would rise in the center and were sweet but delicately so...sorta cake like but stiffer.

is it this maybe??  without the topping.
