Orange Creamsicle cookies
Creamsicle Orange Cookies
You'll love Creamsicle Orange Cake Mix Cookies, and they're very easy to make any time. These soft cookies filled with orange flavor and white chocolate chips are just so absolutely delicious!

Ingredients:
1/2 cup butter softened
8 ounces cream cheese softened
1 egg
1/2 teaspoon orange extract
1 box orange cake mix
orange food coloring (or 1 part red to 2 parts yellow) optional
1 cup white chocolate chips
1 cup powdered sugar
INSTRUCTIONS
Preheat oven to 350F. Line cookie sheets with parchment paper.
In a large mixing bowl, beat together the butter, orange extract, cream cheese, and egg with an electric mixer until smooth. Add the cake mix and mix well.
Optional: add orange food coloring if desired until the cookie dough reaches your desired orange color.
Stir the white chocolate chips into the cookie dough. Chill the dough in the refrigerator for 30 minutes.
Form the dough into 24 balls. Roll each in the powdered sugar and then place on the parchment paper lined cookie sheets.
Bake the cookies at 350F for 12-13 minutes. Cool on the cookie sheet for 2-3 minutes, then remove from the pan and finish cooling on a wire cooling rack.
updated 6/1/22 The batter is yummy if you're interested. It's not hard. Just use the mixer till you get to the white choc chips and then use a spoon to stir in. AND, I should have said this: Whenever i use a citrusy or minty flavoring i always use just a little vanilla along with that to tame it a bit.

This just might be the dreamiest version of Orange Creamsicle Poke Cake thanks to the addition of cream of coconut incorporated into the cake batter. The layer of intense orange curd adds brightness, while injecting a zesty taste in every bite. This is going to be your favorite poke cake recipe

INGREDIENTS
Orange Curd (can be made up to a week in advance)
1 tbsp lemon zest
1/4 cup orange zest (from 4-6 oranges)
1/4 cup fresh lemon juice
2 tsps unflavored gelatin
1-1/2 cups granulated sugar
1 cup orange juice (no pulp) (can be fresh or store bought)
9 large egg yolks
12 tbsps unsalted butter, cubed
Cake:
1 box white cake mix
1 (14 ounce) can sweetened condensed milk
1-1/2 cups cream of coconut (found with drink mixers)
1 (8 ounce) package cream cheese
1 (16 ounce) container frozen whipped topping, thawed
1 cup shredded sweetened coconut
INSTRUCTIONS
For the orange curd, zest lemons and oranges and set zest aside. in a small bowl, sprinkle gelatin over the fresh lemon juice. Set aside for 20 minutes.
In a small bowl, sprinkle gelatin over the fresh lemon juice. Set aside for 20 minutes. In a large saucepan, whisk together sugar, orange juice, egg yolks, orange and lemon zest. Place over medium heat and add butter. Continue to whisk until the curd begins to thicken. (Small bubbles will begin to appear on the sides of the pan; about 8-10 minutes.) Remove pan from heat and whisk in gelatin until dissolved. Pour curd into a bowl and place plastic wrap right on top of curd. (This will prevent curd from developing a skin.) Cool completely and place in the fridge overnight (this can be made up to a week in advance).
Make and bake cake in a 9 x 13 pan according to package directions. When cake is removed from the oven and is still hot, poke holes in the top with a skewer. In a medium bowl combine sweetened condensed milk and crème of coconut and pour over warm cake. Let cake cool completely.
With a mixer, combine orange curd and cream cheese until the mixture is spreadable. Spread all over the top of the cake. Spread whipped topping over the orange curd mixture and sprinkle with coconut. Refrigerate for several hours before serving and keep any leftover cake refrigerated as well.

I can't find orange supreme cake mix for the cookies so i'm gonna have to use lemon or yellow cake and orange flavoring and orange zest. I'm still going to tint them orange.

Today this am: GHQ called and needed to go to store so i said i did too and went to pick her up. She lives about 2 miles away. Got there, drizzly, slightly cool, dampish, we go into town and she says, "lets stop going to walmart. Both of us get angry everytime we go there. Let's go someplace else." She says this as we're about to turn into one of the walmarts and instead we take a quick turn...WITH SIGNAL ON!! into Food Lion just as you leave town to go to another little town. It was clean, shelves were stocked, it was orderly and what's even better is that the clerks...every last one was available and courteous. And guess WHAT!!!!! THEY CARRIED ORANGE SUPREME CAKE MIX!!! I bought 3 boxes of it!! LOLOLOLOLOLOLOLOLOL
