Re: Homemade Mayo!
And then there's a few from Good Housekeeping.
3 egg yolks
1/2 tsp. salt
1/2tsp. sugar
1/4 tsp. dry mustard
1 1/2 cups salad oil (I've quit worrying which type of salad oil ages ago)
3 TB cider vinegar
1 TB lemon juice
Beat egg yolks, salt, sugar, and mustard 2 minutes.
Continue beating, and gradually add 1/2 Cup oil; 1/2 tsp. at a time, until mixture is smooth and thick. (I don't know as it's necessary to be that slow about it.)
Still beating, add vinegar and lemon juice to the mixture.
Beat in remaining oil, 1 TB at a time, until all the oil is absorbed, and mixture is smooth and creamy.
OR
Blender Mayo
Olive or Salad Oil
1 egg
2 TB Cider Vinegar
1 tsp. Sugar
1 tsp. dry mustard
3/4 tsp. salt
1/8 tsp white pepper
In covered blender container at low speed, blend 1/4 cup oil and remaining ingredients for 1 or 2 seconds, until thoroughly mixed.
Remove center of cover (or cover), and, at low speed, very slowly pour 3/4 cup oil in steady steam into mixture, continue blending until well mixed.
**Only reason I bring it up is because you might want to get rid of those egg whites, and I believe you don't need to get quite so fancy w/the oil. I've gone back to using veggie oil, and would probably use that, seeing as the last bottle of Extra Virgin Olive Oil.
****EDIT #2: Bless this board tries my patience like none other. Forgot what I came back to say.
