Did you know Hawk that in Japan, one cup is 6 ounces unlike here it the US where i cup is 8 ounces.

I just dredge them in flour salt/pepper.

Corn flour>batter>flour or corn flour
Use either flour and add a little water or milk at a time until you have batter.
Mostly I fry everthing with Zatarains or Louisiana Brand fish fry and make batter with that.
