The broccoli soup was way better than the stuffed onions and a lot less work.
I used evaporated milk but heavy cream would have really kicked ass.

The onion filling in the other recipe was very similar to bisque. Bisque usually employs bread crumb base instead of rice.
Those onions would be killer, stuffed with crawfish, shrimp , or seafood bisque.
I would omit the carrots and add green onion and bell pepper to the mix and just make a simple patty or cake that can be breaded or not. Baked or fried.
