Chopping Broccoli

I picked 3 More of these heads today. I think I have enough with one, to make that soup recipe.

I have everything ready to go for the broccoli cheese soup depicted in Red's thread.

I couldn't find my grater. I think i know where it's located but too much trouble to get to.

All I had was baby carrots. So i ran them through a mandolin and sliced them super thin into medallions. Lol. It took a while to slice each one of those little things but they came out great.

Then I looked and didn't have any cheese. Well, without cheese, it's just No use.

Just last night, I threw away about 12 ounces of what was left on a cheddar block. It had some mold on the sliced end. It was in a Ziploc and I threw it in a plastic grocery bag for garbage.

I started thinking( yes I know this is dangerous) and pulled the cheese out as I hadn't thrown anything away yet.

I cut the mold off and the inside was still good. I ended up with 8 oz.

I'll try to remember to take a pic when it's done.

I always slice off the mold... (think bleu cheese) to prevent that, keep the cheese frozen.  Won't hurt it.

I made it and it was very gooooood! My dad ate 2 bowls. I had about a quart and a half leftover. I put it in jars to send to his house.
Could have used more salt and pepper for me but it was damn good.

Tonight I'll try those stuffed onions with chicken.

Slicing off the mould is fine and freezing it's fine too. If you freeze cheese it's easier to grate/shred it first then you can just grab a handful when you need it and leave the rest in the freezer.

BTW that's a HUGE head of broccoli.
