Most folks use flour and butter. But I like the cornstarch option.

Works great with shrimp , too.

The kicker is.... Mais you top dat with crispy fried crawfish or the case of shrimp etoufee, fried shrimp!

Thunder and lightning! Well dat is so good, yeah!
