Pumpkin soup
Made a really nice pumpkin soup yesterday.
One of my better ones.
1 Large onion, 4 garlic cloves, about 1 teaspoon of cummin, bit of olive oil. Hot soup pot till onions go clear. 4 mins ?
Add the pre chopped up, peeled veges.
3/4 a pumpkin, 1 large potato, 3 carrots, 1 turnip.
No water, keep heat high, stir it often, want some vege surfaces to brown. Put heavy glass lid on when not stirring.
10 mins?
Add 600 odd mls of boiling water. Keep stirring, reduce heat a bit. Water will be nowhere near covering veges. About 1/3 of veges under water.
Keep stirring and use potato masher at times.
Some veges will start to soften in areas.
Put heavy glass lid on when not stirring.
25 mins? Reduce heat.
When some veges are mushy reduce heat.
Keep stirring and mashing
Put heavy glass lid on when not stirring.
Once mix is thick lumpy stage turn heat off.
Let it sweat for the next 2 - 3 hours.
No bubbles coming up, wisps of steam coming off soup
Leave heat mostly off, turn it onto low for about 4 mins bursts every 30 mins till it starts to bubbles, then off and stir.
About 1 hour before serving add in 3 chopped celery stalks and 1 cube of low salt vege soup flavouring.
Stir and keep sweating.
Makes about 12 meals. Freeze most for the week.

Im making some biltong today. But cant be bothered waiting a week for it to dry, so have it in the oven on fan bake at the lowest temp, should be ready latter today, It wont be the classic SA treat, somewhere between biltong and beef jerky , It will still be good
