French Fries
I've never tried the cornstarch method.
But I have tried the double fry technique and it works.
It's how McDonald's cooks their fries. Low heat fry, frozen, and then high heat fry at the local restaurant.

I like my fries dipped into garlic aioli or just plain and sprinkled with chicken salt. Double fry is good if you have the patience. Corn starch looks like a good alternative.

The English have been doing the double cook for years . Its the only way to get a good chip
