A little sugar is supposed to make them light. Too much sugar is revolting. Mine had too much sugar which did nothing to decrease their density lol.

in this recipe the sugar was added to really kick start the yeast , that was my feeling as it was added to the water and yeast before mixing with the flour,

Whick may make them light but it is no substitute for working the proteins " gluten" in the flour

They're good 2. They're actually really good sliced on crackers with some camembert cheese. Sounds like a terrible combination but it's Mmm Mmm!
