How do you feel after finding a new conspiracy theory?

Oh, I think evolution is a theory.
I am inclined to believe it however there is a curly question I have that opposes evolution.

Sorry, took me time.
Ok, so evolution suggests some species evolved from a base version millions of year ago.
eg, Giraffes evolved from horses.
Lets pretend 20 million years ago a group of big horses wandered off together and started to reach up higher for food.
Their necks got longer and they interbred, over millennia they evolved into giraffes as we know them now.
So, that is all good.

How come 10 or 5 million years ago, another group of big horses did not wander off together and do the same thing?
At this stage they would be 1/2 evolved toward giraffes from horses.
How come there are not numerous strange 1/2, 1/4 and 3/4 evolution models?
All the species seem quite separate and complete in their evolutionary path.
