Crab Imperial
First time i've made this. Crabmeat cost me 33.00 a pound. This BETTER be good.
served with Crusty Gahlick bread. i'll slice some fresh tomatoes topped with a little basil as a colorful side.
southern heritage cookbook
1T butter or margarine
1T flour all purpose
1/2cup milk
1.5 t worcestershire sauce
1t instant minced onion
2 slices bread, no crust cut into cybes. i only use one.
1/2 cup mayo
1T lemon juice
pinch pepper
1/2 t salt
1 pound lump crab
1/4 cup butter for sauteing
paprika
melt butter in heavy saucepan over low heat ..add flour. Cook 1 minute stirring constantly. gradually add milk, keep stirring till it is thickened and bubbly....add worcestershire and onion. Fold in bread cubes....cool slightly. Then stir in mayo, lemon juice, salt and pepper. Set aside.
saute crabmeat in 1/4 cup butter in heavy skillet. once heated through, add to the sauce, combine. Spoon mixture into 1 qt lightly greased bakind dish. sprinkle paprika over top...
bake 450 for 10 minutes or until hot and bubbly. Serve immediately, yield 4 servings.

Great as a sauce served over fried or blackened fish, too.
You could add some crawfish tail meat or small shrimp.

GHQ called me to come to her house.. I took her four big slices of my birthday cake and then she gave me a whole basket full of fresh produce straight out her garden. We are starting to suffer here for lack of water. The corn is all curled. it's gonna be a terrible corn harvest this year.
