Hawk Wins Lottery!
When you do right , the good Lord rewards you!
My back bedroom was so full of junk(no bed in there) from floor to ceiling I couldn't open the door anymore. So after I cut the last 0f the grass this morning, I decided to tackle dat.
Had to take everything out to vacumm. Then I started consolidating things and throwing things away. I also have 2 bicycles in there.
I got to a big box of empty wine bottles and restacked those. There was some more bottles in a smaller box, underneath. I went to put those in the big box.
I grabbed one and it was full. The whole case of twelve was full. They weren't labeled so I wasn't sure but I was pretty sure what is was. I put a bottle in the freezer and one in the fridge.
I've been here almost 5 years and didn't know there were full bottles of wine down there. Prolly made that 7-10 years ago. I don't know why I didn't label the bottles.
Just about finished in that room , so I opened the one in the freezer.
OMG! So smooth, dry, with just a touch of sweetness.
Wild Muscadine. Wild and tame Muscadines are the only true Vinifera grape that grows in the south.
Quality is excellent. No lees in the bottom of the bottles.
True Vinifera wine done right does not develop lees like fruit wines.
With corking, oxidation is slow and desirable with true , first run, Vinifera grapes
Fruit wines should be consumed 6 -18 months after bottling. They will oxidize quickly .

It's so smooth, I can't really tell the ABV from taste, I keep records on every batch. Brix, specific gravity from start to finish, and potential Alcohol by volume.Calypso Jones wrote:how do you forget a dozen bottles of wine. I'll never find those papers. Lol
But i push the sugar levels on specific wine yeasts tolerance to obtain maximum abv. Adding more sugar during fermentation does not make the wine sweet. It only increases the alcohol. Resweetening is done on the finished product.
I've never made a wine under 12-13%. Usually 14-16%. Butbi did get a batch up to 22% once. Lol
I guess I'll have to drink a bottle to see.

I can't get over the rich body this wine has.
It may lack many things and added fake notes but there is nothing fake about this wine.
I have "dines" in the freezer. Looka lika I'll start a fresh batch soon.
Don't think I can wait 10 years to drink it again. I'll be dead!

You'd be wasting your money.
Today's people don't appreciate or understand wines.
They want something fruity or sweet that taste good.
I love flavored wines like Arbor Mist and Boones Farm!
They taste great! 3-4%alcohol. It should be against the law to call that wine. I'd have to drink 6 fifths of that to catch a buzz!
In the old days , Boones was da bomb . Good wine made with fruit and Apple derivitizes .
Then it went to citrus wine.
And it's still like that. Uness you buy classic Strawberry Hill! Which is still 7-8%alcohol last time I looked .
Crazy!
Go through all the Boones wines and only one that has any alcohol is Strawberry Hill and it's a far cry from the original product at 12 %.

Re: Hawk Wins Lottery!
A couple boxes of wine bottles?
And this, under your boxes of empties?
Far be it from me to be sanctimonious, especially regarding distilled spirits...but isn't that a bit of a tell?
I mean. I've been a beer drinker for most of my adult life (pre-diabetes) and I've gotten hammered on malt liquor more than once. I've drunk Jack (overrated) and Southern Comfort (for girls, IMHO) and Jim Beam (was good, no more) and Old Crow (as good as Beam and half the price). I've put Everclear in Diet Coke.
But...I've only gotten lit on wine, twice.
It's unlike ANY other drunk. You don't come off it! It just hangs on, until you're absolutely sick of being blotto, twelve hours after your last glass!
