Carrot Couscous Empty Carrot Couscous

Thanks to HelloFresh I've been introduced to Couscous and I love it.  It's SO FAST and no fuss!

Carrot Couscous

Grate a carrot and crush some garlic
Melt a bit of butter and a drizzle of olive oil in a pan
Add carrot and garlic and stir for a couple of minutes until softened
Add around 3/4 cup water and some chicken stock powder and bring to the boil
Stir in around 100gm/3.5oz couscous then just take it off the heat and put a lid on it
Then you just let it sit for 5 mins or so and it's ready
Fluff it up with a fork and serve.
You can stir through some baby spinach leaves before serving if you want to.

Serves 2-3

So fast and very tasty.   Not starchy like pasta or rice.  I'm not keen on very starchy foods so it suits me well.
