Zucchini Boats
Zucchini Boats
6 med. zucchini
2 cups bread crumbs
2 eggs, slightly beaten
1 large tomato, diced (I peel mine)
1/3 cup Parmesan or Romano cheese
1/4 cup minced, fresh parsley
2 garlic cloves, minced
1/2 cup chicken broth
1/2 tsp. salt
1/8 tsp. pepper
2 Tbs. butter, melted
1. Cut zucchini in half, lengthwise. With a spoon, scoop out and reserve pulp, leaving 3/8 in. shell. Cook shells in salted water for 2 mins.; drain.
Beat eggs in bowl large enough to hold all ingredients. Chop zucchini pulp, add to bowl. Then the bread crumbs, tomato, Parmesan cheese, parsley, and garlic. Stir in chicken broth, salt and pepper. Stuff into zucchini shells.
2. Place in greased, 13x9 in. baking dish. Drizzle w/butter.
Bake, uncovered, at 350 for 20 mins, or until golden brown.

They used to be CHEAP but they're almost $10kg here at the moment. Some places at $2 each.

Not the season for them here, Interesting thing about Courgettes is than can produce a pesticide if certain climatic conditions prevail that can make them bitter

I had to look up courgettes. Interesting bit about them producing a pesticide. Considering they're in the same family as cuc's, I wonder if it wasn't "certain climatic conditions" that made our turn bitter. That would be after growing the sweetest ones ever for many years.
Hmm. We've an abundance of zucchini. Wish I could share with ya's. I wonder if @Daily Bread would take zucchini bread in lieu of banana?

Nope ! No zucchini goes into my belly - only banana bread that I havent received from you yet .

I've already harvested ONE zucchini from my Hawk Style Garden...which means...i dug holes in the grass and then planted. so far. so good.
