To think that they didn't is only a tad condescending. That they didn't, perhaps, have the ability to do what they'd like w/the technology they had, doesn't, for a moment suggest that they didn't understand it.
Furthermore, there's also a strong possibility that the Greeks did use the technology to their own ends, and that particular tidbit was completely missed by these "experts."
