No, lunch is baked pork chops and home tater wedges.

Dinner began with a fresh cooked roux from scratch and then some sliced onion to cook down. I hit this one right. You know when you go to a fancy restaurant and you smell that onion/roux cooking? Then i added water(but not too much) and brought to a simmer and incorporated the roux making a killer brown gravy. Then seasoning. Then 4 large Yukon Gold potatoes peeled and cubed small.
Add one link of smoke sausage sliced. If you need a little more water to cover the potatoes, add it.
Then choke that down until the potatoes overcook and partially break up into the gravy making a thick potato stew/-smothered potatoes.

Now, all I have to add is 2lbs of fresh crawfish tail meat and cut the heat to super low.
You can have the gravy as thin or as thick as you like it. I like it almost like mashed potatoes.

Smothered potato stew with crawfish and smoked sausage for dinner later.
