Orange-Spice Pumpkin Bars with Browned Butter Frosting

Tempting flavors of pumpkin pie and warm, buttery frosting--what could be better on an autumn afternoon?

Ingredients
Bars
2 cups Gold Medal all-purpose flour
1 1/2 cups granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons pumpkin pie spice
2 teaspoons grated orange peel
1/4 teaspoon salt
1/2 cup vegetable oil
1/2 cup orange juice
1 cup canned pumpkin (not pumpkin pie mix)
2 eggs


Frosting
1/3 cup butter (do not use margarine)
2 cups powdered sugar
1/2 teaspoon vanilla
2 tablespoons milk


Steps
1 Heat oven to 350°F. Grease bottom and sides of 15x10x1-inch pan with shortening; lightly flour (or spray with baking spray with flour).

2 In large bowl, beat bar ingredients with electric mixer on low speed, scraping bowl occasionally, until moistened. Beat on medium speed 2 minutes, scraping bowl occasionally. Spread batter evenly in pan.

3 Bake 23 to 27 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

4 In 2-quart saucepan, heat butter over medium heat, stirring constantly, until light golden brown. Remove from heat. Stir in powdered sugar, vanilla and enough milk until smooth and spreadable. Immediately spread frosting over cooled bars. Refrigerate about 15 minutes or until set. For bars, cut into 8 rows by 6 rows. If desired, garnish each bar with orange peel strip.

My favorite every year OR.....my kids favorite.  I may stop after this year.

5 cup salad.   Some call it ambrosia but i don't.

1 cup drained pineapple tidbits
1 cup drained madarin oranges
1 cup coconut
1 cup sour cream
1 cup mini marshmallows


combine.  best if left to sit covered overnight in frig.
yummy.   5 cups...see?  hence.....five.  cup.  salad.

update: i didn't quit making it...they still like it.

next...my AWESOME sweet potato casserole.  WHICH COULD BE...dessert. Panicked there for a moment, i thought i'd lost it.

Yvonne's Mom's Mashed Sweet Potato Casserole

3 cups cooked, mashed sweet potatoes
1 cup sugar
1/3 stick butter
1/2 cup evaporated milk
1/2 t salt
1t butter Flavoring
2 eggs

Mix the above well, pour into deep casserole dish, set aside,

Next The topping.. Using your fingers to combine

1 cup packed light brown sugar
1/2 cup flour
1 cup flaked coconut
1 cup pecans
1/2 stick melted butter

Spread this mixture over the sweet potatoes, Bake at 350 degrees for 35 minutes.

Bump for tomorrow

This sweet potato casserole dish is awesome in my opinion.  I am torn whether to treat it as a side dish or my dessert. This is an old recipe from my sister in law's mother. It became one of our favorites too.
