Sea Grape Jelly
I found a large sea grape tree and have been harvesting them for 10 days or so. Have about 16 cups. At any rate, I mashed 4 cups into mush yesterday, strained the juice etc. I'm not "canning" this batch so I didn't prep it. I did simmer it for 90 minutes. I ended with about 2 cups of juice. I dissolved the Knox Gelatine in cold water as directed and poured it into a pyrex with the still hot juice. I allowed it to cool then placed it in the fridge. It did not turn to "jelly" it is just a syrupy liquid. A) what did I do wrong and B) what can I do to make it gel?

did you cook it too long? too high a heat? did you put the pectin in a too hot mixture?
these could have an impact on the jelly not setting.

It wasn't boiling but too hot to touch. Do you think I could let it warm to room temp, and then add another packet?

Welll. I tried it and it worked. Firmed up in about 2 hours. I removed about 2/3 into a sauce pan and heated it until it bubbled. Sprinkled the gelatin into the remainder in the dish. I dissolved as before and then added the hot mixture. Stirred it in and put it in the fridge.
I added no sugar to this batch. It was a bit tart, on the order of unsweetened yogurt. The taste was good. I had 26 oz of very sweet strawberry jam. I mixed the two together and all is now in the fridge. It is still too sweet. Next year I'll mix it 4 to 1. Thank you, really appreciate your thoughts. Oh and I understand using instant coffee for the uniformity. It took me 5 decades to realize measuring is the only way to gain consistency. Took several months to figure out how much of each, to get the flavor I like. As for chocolate.......

WTF is a Grape-nut?!
For the first time in my almost 62 years of life, I bought a box of dat about 2 years ago.
It was like trying to eat ground-up and pellitized cardboard. It should be against da law to sell or manufacture dat for human consumption!!
I dumped the rest of the box in a large bowl with some milk and called the neighbors dog over. He looked at it, then at me.
And went back home.
I could tell he would never trust me again.

It was like trying to eat ground-up and pellitized cardboard. It should be against da law to sell or manufacture dat for human consumption!!

Oh, lordy, I remember that stuff. It hit the shelves when all this 'health food' came into style in the 70's. I think you were only supposed to pour a very small amount into a bowl w/lots of milk, then let it soften a tad. Or some such.HawkTheSlayer wrote:WTF is a Grape-nut?!

Remember Euell Gibbons? He was a regular on Johnny Carson in the mid 60's. He advertised for some cereal company, the line he used was "the flavor reminds me of wild grape nuts". As for grape nuts, they were marketed by Proctor and Gamble to raise the sales of dental floss.
