Vegetable Dishes Empty Vegetable Dishes

Tomato Pudding.  YOU are not a southerner if you don't like Tomato Pudding.

  There are recipes out there but you basically only need a few things.  

Tomato, diced, slices, whole stewed.   I use canned cause it is quicker.
 I like the diced or slices. if i use the whole stewed tomatoes i squash them up a bit.

Bread, your choice, i used french bread tonite and it was more..um... a coarser consistency, it's not bad.  Usually you take the crust off the bread.  I didn't tonite.

Break up your bread into chunks.   Melt stick of butter in sauce pan. Combine with bread.

Throw your tomatoes in a saucepan with 3/4 cup (or more) brown sugar.   Heat.   Now often the recipe will call for about a 1/4 cup boiling water but i think there is enough water in the diced tomatoes.

combine the bread/butter with the tomato/brown sugar.    Bake in 9x9 baking dish.  

Bake 350 degrees in a preheated oven for 1 hour.  I'd watch it if i were you.

Great as a side dish with lots of different meats...ham, turkey, chicken.

This is one of those recipes that you make it to suit your taste.   Play with it, change it.  make it yours.

Bread Pudding made with tomatoes. Yum.
I have a Ketogenic Bread I get from Aldi. I also have Brown Swerve, Erythritol with maple flavoring to simulate Brown Sugar. I bet that would Rock!
