Corn Macque Choux
The Cajun version of smothered corn. Pronounced Mock- Shoe.
I use tomato sauce. Some versions don't, and include milk or cream
Smoked sausage or bacon is often added.
Shrimp and crawfish tails, or lump crabmeat can also be added.
This is a simple version and most times, simple is the best.
5-6 ears of fresh sweet corn cut off the cob
1-onion diced
Red and green bell pepper
3/4 stick butter
Salt
Fresh cracked black pepper
Garlic powder
Onion powder
Cajun seasoning
Water
Melt butter in skillet or pot. Add onion and bell pepper, saute until done.
Add fresh corn and the rest of the ingredients. Add a little water at a time.
Reduce until corn becomes dented and cooked down.
Add water if needed to finish process, but you don't want to end up with a watery product. Reduce as much as possible when cooked.

It's just cooked corn .
Some folks add a little sugar if the corn isn't to sweet or doesn't have much cob "milk".
You have to run the back of your knife over the remaining cob after the corn is cut off to get that starchy milk.
This meal here is working on a Blue Ribbon for taste. Just have to get it reduced and get the texture right.

have you personaly went out to a cornfield and eaten cobs till you cant eat no more? white sweetcorn is my favorite. bout the only time i mix things up is a corned beef/raisin/peatnutbutter/banana sammich

I just tried some. Its about done.
Reducing and getting thick as the cooked corn is releasing starch.

I might cook a couple of brats in a skillet to go with dat.

Yes! I have personally raided many sweet corn fields that did not belong to me! I've also raided a few dent(field) corn fields when they were in milk stage and edible. Not as good as sweet corn, but pretty good.
I raided the same field later on in the year, at night, and filled up the trunk or pick up bed with ears of corn to feed the animals.
I called that, "going to the feed store".
But that was a long time ago. I just buy an onion sack or crawfish sack full from my buddy, now. Or get them when they are 5/$1 at the store.
